The natural wealth of our territory has not only given us a world-leading mining industry, but also a long tradition of agriculture, allowing us to boast one of the most highly regarded cuisines in the world.
Our ancient gastronomic heritage has been influenced by Spanish, African, Chinese, and Japanese cuisines, making our country a gastronomic powerhouse and positioning the city of Lima as a culinary capital on our continent.   

Among its most representative dishes are:

  • Ceviche, made with fresh fish and Peruvian lemon.
  • Causa limeña, stuffed with chicken, tuna, or seafood.
  • Lomo saltado, a symbol of Creole cuisine.
  • Ají de gallina, a creamy and traditional dish.
  • Anticuchos, an emblem of popular Lima cuisine.

The city is also the birthplace of chifa (a fusion of Chinese and Peruvian cuisine, with dishes such as arroz chaufa and tallarín saltado) and the renowned Nikkei cuisine, which combines Japanese techniques with Peruvian flavors.
